The article page hits are stored in the column "hits" in the Joomla database table #__content.
Maybe you could write a plugin that you install on every website and let it trigger on every page load to increase a counter in the external "master" database.
However, the "hits" are not very reliable, and they don't tell much about the visitor's behavior on your website.
Instead, I would use a self-hosted version of Matomo Analytics, a privacy-oriented alternative to Google Analytics that protects your data and your customers' privacy.
